Pasta Prepared in Mediterranean Way


  • 500 g of spiral pasta;
  • 50 g Parmesan;
  • 1 eggplant;
  • 1 carrots;
  • 1 head onion;
  • 2 cloves garlic;
  • 400 g of fresh tomatoes;
  • 1 tsp brown sugar;
  • 50 g of black olives;
  • 4 tablespoons of olive oil;
  • Origano;
  • A mixture of spices;
  • Pepper;


The pasta should be cooked in salted water with a few drops of olive oil and drained. The onion and the garlic are cut finely as much as possible, the eggplant is cut into cubes, and the olives into round form. Carrots and tomatoes are grated. On a little olive oil are saute the carrot, onion and garlic, and then add and briefly saute the eggplant. Continue with diving with occasional water splash as needed. When vegetable is ready, add grated tomatoes, olives, sugar and spices to taste. Boil at moderate temperatures until softening all the ingredients. Before the end mix the Parmesan and oregano into the sauce. The cooked pasta is sprinkled with the sauce and slowly mixed.
