Stuffed Peppers with Rice and Vegetables (Lean) – Recipe

This recipe is easy to make and will take approximately 30 to 60 minutes.


  • 7 peppers;
  • 2 olive oil if necessary;
  • 1 onion;
  • 2 cloves garlic;
  • 1 carrot;
  • 1/2 pumpkin;
  • 1 tablespoon chopped parsley;
  • 2 cups rice;
  • 1 tablespoon spice;




First wash the peppers and remove their seeds. After peel and wash the onion and garlic and chop into small pieces. Wash and chop into small cubes the other vegetables. In a pan put olive oil and add the chopped vegetables with 1 cup water and simmer with the lid to soften. Once the water will evaporate, add the rice and fry it a little so that the grains can stay whole. Then season with spice, black pepper, salt for taste, chopped parsley and put it aside to cool down.


Start to fill the peppers with rice and vegetables and place them in the pan. Aside in another bowl prepare soup with boiled water, spices, salt and pepper, then water the pepper with the soup and bake in oven at 250c. for 25 – 30 min.
